I have just put on the Red Beans and Rice for Dinner tonight. I am not going to be around for the rest of the afternoon, so this is one of the easier dishes to let cook all day. I have the beans in a cast iron Dutch oven on a upturned platesetter with some kiln posts creating air space under the pot. I won’t have to worry about stirring or the beans burning. For the rest of the afternoon the beans will simmer at 325.[p]I cannot wait.
