corn starch dusting

This topic has come up a number of times this summer, so I am curious how do you dust? I'm thinking maybe a bulb duster, similar to that used in pest control. Heck I don't know! Also, what's the definition of dusting for corn starch on chicken: still see skin color/texture to no color/texture noticeable?[p]Thanks Tom

Sandbagger,[p]You can put the corn starch in a tea ball or a fine mesh strainer and lightly tap to dust holding your hand about a foot above the chicken. The chicken will only need a very light coating... so go sparingly the first time adjust from there on your next cook.... hope this helps, dude.

Sandbagger,[p]At Bed, Bath and Beyond I found a shaker with a screen mesh top. Also has a plastic cap. I think it's intended purpose is dusting confectioners (really fine) sugar. Stainless. Holds about one cup, cost about $5.[p]As far as thickness, what Woo said.[p]DD

DobieDad,[p]That thing works great for a lot of different contents. Once you buy more than one though, you have to buy a label maker!!!

i occassionally dust with chefrds method of flour and corn meal. keep it thin and dont let the peices touch each other, they will be pasty were they touch. works even on beer can chickens, just make sure the wings dont sit on the breast.

Celtic Wolf,[p]Recently there was some lengthy discussion on another forum regarding the use of a flour mix on chicken (not sure if cornstarch was in the mix, but the results and appearance are similar) Anyway, the judges DQ'd it. After some inquiries, it was determined that it is in fact legal. It sounds like one of those things that should have been mentioned prior to turn in to avoid any confusion on the part of the judges.[p]~thirdeye~
