<p />Wife was away tonight and I got to experiment. I bought a whole pork tenderloin the other day, and cut it into 1 1/2" steaks and a couple of roasts. It was a big one. After work TRex'd one (S&P only) at 750 sear 1 1/2 min/side, then shut it down and rested 20 min. until 400. Cooked raised grid at 400 about 7 minutes/side until 145 internal (overshot a little bit). Split fresh squash with EVOO, S&P during final roast. Really a great "steak." It was very juicy for well done meat. And less than an hour from lighting to eating. Next time will try a rub, probably Dizzy Dust.
