Plateau for butts around 190?
Does that makes sense? Has anyone ever seen a plateau this high? I was shocked when I got into the 180's so quickly, but now it's stalled at 192....
Larry McSass,[p]There are no plateaus around that temp and you need to just up your cooking temp and get the damn thing done. [p]Dave
Larry McSass, keep testing it for doneness. It may already be done; you can't go entirely by temp to know when a butt is done.
Larry McSass,[p]I would bet the thermometer isn't reading right. You're 190 is probably 160 - 170. Boil some water, put it in and see if it reads 212.
