When finishing the point to make burnt ends do you keep the temps low or do you crank it up for that???

Rick G,[p]I keep it at the same temp for cooking and for the sauce reduction. Just sample a piece every 10 minutes until you like the results. They are good for snacks or on a sandwich. They are kind of hard to screw up. Some BBQ joints do the sauce step in a big skillet on the stovetop.[p]~thirdeye~
