These were incredible, a variation of 3/1/1, about 3.5/1/1, fire went down at the foiling stage, had to be recesitated, but only took about 10 min. Used JJ's sauce, which was sweet, yet tangy. I have done ribs 3 times for 3 poker games, and eveyrone said that these were by far the best ones. Previous times I haven't removed memebrane, and didn't cook as long on the last leg. The longer the better. I think 11 people (this included 4 wives who went to the movies while we played poker) polished 6 racks. Incredible food! [p]Pokerribs.jpg
