I'm going to be smoking a 17lb. turkey on Friday, to be carved, and dispensed cold on Saturday night. I will smoke this per a recipe that was quite successful in my "pre-BGE" days, with a injection by syringe of marinade 24hrs. prior to cooking/smoking. Should I use the upright turkey holder, or lay it flat in the traditional manner? If I use the BGE upright turkey holder, will all the marinade injected run out of it? Sugggestions and time/heat recommendations welcomed.
