I am doing my first brisket today, it is 15 LB I started it at 11 am had a hard time keeping the temp bown I have it stable at 240 dome my question is I think it is at plateau now it is staying at 159 internal for quite some time if this is plateau how long does this last before it starts to rise again.I have only been cooking on the BGE for two weeks. The food is great you guys are a great help with all your posts. I have learned so much by just reading your posts thanks
