Kind of a pain in the butt to prepare but well worth the effort.
[p]Stuffed with a bit of jalapeno, some monetary jack cheese and wraped with some hickory smoked bacon.[p][p]Egg at about 350 and cooking away - about five minutes.[p][p]Out of focus, but served with some butter for dippen and that is some kinda good.

BurntRaw,[p]Sounds good. I have a few questions:[p]1. Did you butterfly and stuff then use the bacon to wrap back up?[p]2. What did you use for the Jalapenos, just bits of peppers cut up and mixed in wiht the cheese? [p]Thanks

BurntRaw, I've only got one question. How expensive is monetary jack cheese?? Looks good though, just want to see if I can afford it. Great idea by the way. ;>)

Yep, butterflied them and cut the peppers into small strips. Inserted the strip of pepper, covered with shredded cheese, closed um up and wraped with bacon. I pre-cooked the bacon about half way...utter whys the shrimp would be burnt by the time the bacon was crisp.
