Chef RD's wings. How far ahead can I batter?

Howdy. With ChefRDs wings you are supposed to chill the wings after flouring. Can I do the milk bath/flour deal several hours ahead???[p]I am doing a variation of ChefRDs wings, substituting Grains of Paradise for half of the white pepper. Then adding Ginger powder istead of half the garlic powder. Half of the wings will get a Hoisin/ketchup/soy/rice vinegar finishing sauce, and half will get the kickass Anchor Bar Buffalo wing sauce (thanks again Qfan1).[p]Man, life is shweeet!
