Chef RD's wings. How far ahead can I batter?

Howdy. With ChefRDs wings you are supposed to chill the wings after flouring. Can I do the milk bath/flour deal several hours ahead???[p]I am doing a variation of ChefRDs wings, substituting Grains of Paradise for half of the white pepper. Then adding Ginger powder istead of half the garlic powder. Half of the wings will get a Hoisin/ketchup/soy/rice vinegar finishing sauce, and half will get the kickass Anchor Bar Buffalo wing sauce (thanks again Qfan1).[p]Man, life is shweeet!     Nature Boy, I've actually frozen and then let thaw later - most times I put in freezer for about 2 hours and then drop on BGE - great either way! :~}

  • Nature Boy, I'm actually getting mine ready tonight to take out to Arrowhead tommorrow. They will set approx. 12 hours in the frig before cooking. I've done this on several occasions before and they turned out great.[p]CWM
