Tenderloin. His recipe was detailed and even suggested using two Polders to get readings from both ends, but never told what internal temp! I saw a general ref to 170 for tenderloins, but since this baby is stuffed with goodies I wonder what it should be. Any Help would be appreciated as I'm up to 117 now, but it is a meal planned for later tonight so I could still use your sage advice folks!
