The wife wants cornish hens for Mom's Day (since she can't eat crawfish) Was thinking of spathchcocking them, cooking on a raised grid at 350 for about 30-45 mins. Sound about right? Any other suggestions?[p]Thanks!

    Shelby, I do mine whole seasoned with Dizzy of the Day. Indirect at 350, with cherry and maple chunks. about 75-85 minutes, wrap in foil for about 15-20 minutes.
