A good friend just showed up at my door with two gorgeous racks of baby back ribs and wants them tonight but has no idea how long they take to cook properly. I said nothing and when he left I quickly took off the membranes and applied mustard and rubs. I guess I will have to cook them at 350 or so for 2 hours and wrap in foil after the cook. Any other ideas except eating at midnight? Thanks.
