I put 2.71 pounds of jerky in this morning; took 1.56 pounds out about 10 minutes ago. Shrink loss was 42%. In other words, $3.99 a pound beef became $6.23 a pound jerky.[p]Ken

BlueSmoke,[p]yes but to purchase it, it would have been somewhere between $15 and $21 a pound. So your still doing well.

What cut of beef did you use??? Did you slice it or was the butcher able to do it for you???[p]Cheers,

I used a bottom round roast, because it was on sale and so very lean. The butcher sliced it; all that remained for me was to cut his slices into strips. For a marinade I used my old standby teriyaki: 2 ounces soy sauce, 2 ounces sake, 2 ounces mirin - augmented here with a quarter ounce grated fresh ginger and 1 clove garlic.[p]Ken
