A friend showed me how to make sausage yesterday. We made his version of Italian sausage. It is amazing to me how much better it is fresh! I’m going to cherry smoke couple of “Fatties” later today. [p]When getting the ingredients together, my Dizzy Pig rubs caught my eye. Specifically, Raging River and Red Eye Express. Has anyone ever tried making sausage with a BBQ rub? [p]

    BabyBoomBBQ:[p]No, but spices is spices . . . Mix a test quantity of your sausage meat with your spice selection. Make note of the quantities so you can scale and adjust the recipe. Fry up a couple of patties for sampling and adjust from there.[p]Homemade sausage is all about you!
