Flat Iron Steak

I picked up a flat iron steak at the grocery store but I'm not sure of the best way to cook it on the egg. Any advice? Catherine

    Q-Scoop,[p]That's a great tasting cut. I'd suggest cooking it rare to med rare. Cooking it more will make it tough.
    Since it's thin, it will only take a few minutes per side over a hot fire. Slice thin against the grain.
    Salt and fresh cracked pepper is all the extra flavor it will need. Good eating... good luck![p]John
