So our St Patty's day dinner went better than expected, even though I had to cook on a stupid gasser (my egg is supposed to be in Seattle on Wednesday, so it will have to wait for the next barge - which means it will get here while we are in Australia, so pretty much no egg for me until Easter....heeeyyyy that's funny..)[p]Anyhoo, I made about 25-30lbs of corned beef (boiled with lots of veggies & lots of cabbage), and I made my first brisket! I'm hoping that if I can pull it off on a gasser, then I can do it on an egg. (right?.... oh please tell me I'm right)[p]The only problem with the brisket was that I pulled it off at 190 degrees, foiled it, and put it in the warming oven. I went outside to pull the ribs off, and I came back in & my husband was slicing the brisket up!! It didn't have time to sit at all. It was good, but I know it could have been better.[p]The bonus is I pulled the whole thing off while wearing my lime green Dizzy Pig t-shirt, which is now splattered with.....well I don't know what, but everybody wanted to know what I used on the meat... MmmmHmmm... Dizzy Pig Team Alaska. :)[p]Happy St Patty's!!!
