A grill recipe for eggplant.

Take a whole eggplant, put small slits all around the eggplant skin and fill each slit with a glove of garlic (about 8-10). Put on a 300-350 degree grill, shut top and cook until soft. It will pick lots of smoke flavor.[p]Remove eggplant, cool for 15 minutes, cut in half and scrap out the inside, roasted garlic and all. Mix the inside mixture with a hand whip, then add a little olive oil and fresh bread crumbs for texture. Take an ice cream scoop and put a scoop in a bed of lettuce, serve at room temperature.[p]You will be surprised how much smoke and BBQ flavor it picks up. This recipe is not for someone that doesn't like a smoked flavor or garlic.[p]N.W.
