A tale of two butts

<p />Did my first two butt cook for the Superbowl. They were both about 7 lbs after I trimmed the larger one, but one felt a lot firmer than the other. It was like the difference between a relaxed muscle and a tight one. Seasoned one with Dr. BBQ’s Big Time Rub and another with Bad Byron’s Butt Rub. Put them on at 8:30pm. When I checked them at around 7am, the “relaxed” one was done! The second one, pictured above, took another three hours! I kept the fist one, wrapped, in a 165 oven while waiting for the second. [p]Needless to say, I’ll be a lot more careful when I get my next butts for a multiple cook. These were Farmer Johns in a cryovac bag. The bar crowd raved about the meat, so it was all good in the end.[p]Just thought I’d share the experience.
