Now I am a bit nervous. I rub my 14lb Brisket w/ Dr. BBQ's Smear last night around 7pm. I am not planning on cooking until 5pm. Was this a mistake. Saw a post that it could draw the moisture out if there is salt in the rub (there is). Should I cook it now? Should I rinse it off? Should I relax and do as I planned? Oh...I am way to impatient!
