Turkey Pastrami Help

I've looked on the web, found a couple of recipes for turkey pastrami, sounds straightforward enough, but I'm wondering what the collective wisdom and experience of Eggers says about the idea. Like a lot of others, I need to cut back, so I thought this might be a good start.

    I made turkey pastrami recently, turned out good. Tasted something like a ham but with turkey flavor.....so don't expect this to taste just like beef pastrami. I used fresh turkey breasts, no injections from the processor(very important), skinless, bone in and a 4 day brine. Next time I'll do boneless. I did a pepper crust when smoking and I liked that. Made turkey Reuben sandwiches on caraway rye bread. Yummmmmm.
