<p />Flipped upside down with swamp venom and corn starch coating. It really does make outside crispy. So much so that where this one was trussed it was seized shut. Also if you are in the right light and squint a little you might see the face of Willie Nelson.

How much corn starch did you use? Could you tell us how you put it on, mixed with rub, before rub? How long before the cook? Thanks, Jim.
