Butt plateau in 130's?

Could a butt plateau in the 130's internal? Fire is still rolling. I assumed the plateau would come much later?[p]Thanks!

  • Jake,[p]Something is up! That is too low to melt the fat and tissue. Are you sure you your probe is properly placed? What is the grid and dome temperature? If that meat has been sitting at that temp for over 4 hours, you may want to toss it. I'd verify that meat temp ASAP.[p]I put on a 8.3 Lb butt at around 8pm last night. Grid temp was 230 to 240 and watched by a BBQ guru. It was a stormy night in the high 40's. The butt hit 170 around 6am and it's at 180 at 8:37am, the time of this post. I anticipate another 3 to 4 hours before she's done.
