I'll be doing a 14# Prime Rib....ala Mad Max.....start out at 500 degrees and shut down to 350 degrees. How long per pound should I be looking at? Thanks, Paul

  • Midnight Smoker,
Just my 2 pesos worth, but...
My experience with offset, gas grill and ceraminc cookers
indicates about 10.5 to 12 min / pound depending on temp.
SO. Assuming a cooking temp of 350 deg. and 14.5 pounds,
I'd guess that approx 2.5 to 3 hrs. would be about right.
This should get you to a "Rare" doneness, which we like.
Your milage may vary. [p]Hope this helps and Happy Holidays.[p]

  • K_sqrd,
Should have noted that I pull the roast off the grill at about
118 deg. You may want to go a little higher before taking it off.
Remember that the internal temp will rise as the meat rests.
So at 118, a 15 pound roast will rise 10 to 15 deg. to 128 to
    133 deg for rare.

Midnight Smoker,[p]Here is a pic of a 7.68 pound roast that I did last Sunday as a pre-holiday test. Seared at 550-600 for 10 minutes and remainder cooked at 325-350 indirect for 2 hours 40 minutes, pulled at 130 internal, let rest for 20 minutes. To cook till the indicated doneness took about 20 minutes per pound.[p]RibRoast005.jpg[p]I will be cooking a 10.5 pound roast myself on Christmas.
