Ooh la wee. We got some new stuff coming in on the forum. The ox tail looks interesting, but today's award (probably this week's award...and if not for Max's turkey thing, this month's award) goes to Gretl and Thirdeye for their poultry thread. Corn starch wrestling is a first for me, not to mention the dark meat meat cut from the white meat gig. I'm all ears regarding anybody else doing this method...

I did the corn starch on chicken thighs last night. 400 dome temp indirect about 50 minutes turned once, they were very good. -RP
