Porchetta - The alternative Thanksgiving

Having cooked four turkeys the week before, decided to do something different for Thanksgiving.  Stole the idea from a segment on CBS Sunday Morning.  Boned and butterflied an 11 pound picnic shoulder, stuffed with rosemary, dill, garlic, Italian parsley and cilantro, seasoned with salt, pepper and coriander.  Cooked to an internal of 150 and rested for 30 minutes.  Here' s the finished product.  Thanks to the many posters who unknowingly contributed to the cooking setup.sliced.jpg
