Turducken Question

When preparing a Turducken, is it better to remove the skin and fat from the duck, or should I leave them on to moisten the turkey?
I hope to prepare a Turducken this weekend as practice for Christmas.
Also, I estimate that the cook will take 10 to 12 hours, as my turkey will be 16 pounds. Is this excessive, or has anybody experience of smoking one of these creatures.
