<p />Here is a pic of the pork butt we are doing in the mini. It is rubbed with a blend called "Jamaican Jolt". This is found in a new cookbook by Steven Raichlen called BARBEQUE BIBLE SAUCES, RUBS, AND MARINADES. I like jerk seasoning, so thought I would give it a try.[p]This is a 2.75# butt and it is in my makeshift drip pan and rack made out of aluminum foil. There is a little BBC Alt Beer in the pan. I hope to smoke it at 200*, but am having trouble keeping the mini below 250*.[p]Fritz
