Cooked a small portion of beef ribs as suggested, indirect, drip pan, grate then ribs flat on the it. Cooked about 5 hrs. about 240 then foiled for 30 min, then direct with a little sauce brushed on for about 15. These were very good, probably the best ribs I have done. These were very lean, I was surprised there was not as much fat on them as I thought there would be when I opened the package. Next time I will buy a larger portion.[p]Thanks for the help given yesterday,[p]New Bob
