I'm not much of a gardener and am not home enough in the summer to keep things properly watered. At the farmers' market yesterday I picked up some gorgeous giant, organic ripe (red) jalapeños to smoke. [p]Wearing gloves, I cut off the stem and then cut them in half lengthwise. I use a woodcutting tool - the kind used in printmaking- to scoop out the insides and all the seeds. A mask and protective eyewear are also a good idea!
I then put them in a vegetable grill pan (with holes) and smoke over low heat.
I grind up half of them in my spice grinder and keep the rest whole for flavoring stews, stocks, or whatever.[p]I know I've posted the woodcutting tool tip in years past, but there are so many new people here that I thought I'd share it again.[p]Bone appètit! [p]Mrs. Appledog
