Fire for hot sear

Hello Egg Friends,[p]When making a fire for a hot sear for steak, I have no trouble getting the egg to 750. Should I put the steak on when it hits 750 and there is lots of flame or should I wait until the flame dies down? If I let the flame go down the temp seems to drop to about 650. Don't I want it as hot as possible?[p]Thanks,

You will get different opinions but I sear at about 550. At those temps you will have flames, just go for it. You do know about the Flashback don't you????? If not please check the link.[p]Regards,

Bob, It will just sear it. It will get a little char, but it's all good. The inside will be perfect.
