Leg of Lamb.......YES! Gyro recipes?

Today's dish was leg of lamb. As per JJs direction it was done in a v-rack over a dry drip pan at 350*. This 8# legg took about three hours. It was seasoned with garlic cloves in the meat and rubbed with olive oil, rosemary, salt, pepper and a hinft of lemon juice. It was cooked till internal temp read 140*.[p]This is excellent stuff. We have plenty of leftovers though, so I will be searching for gyro recipes and other wonderful things to do with leftover lamb.[p]Fritz

One our favorites for leftover lamb is Shepard's pie. In a deep dish pan place mixed vegetables (peas,carrots, beans etc.), a layer of lamb (season with garlic and rosemary) with mashed potatoes covering the lamb, fill with gravy then place in the EGG sitting on a pizza stone or plate setter at 500* for about 10 min until mashed potatoes turn a golden brown.
That looks great have to give JJ recipe a try when the wife is gone she just will not do lamb.[p]Elder Ward
