Slicing and Storing Pit Beef

I am trying out the pit beef for the first time (thanks to WessB's site). [p]My question also applies to cooking a brisket. When the cook is complete and rested, do you slice the whole piece of meat at that time or slice just what you are planning for the meal? Does it make a difference in the piece of meat staying as a whole and waiting to slice at mealtime as in eating leftovers? Does it retain better flavor to keep it as a whole and slice later? Also, how do you freeze, as a whole or slices? [p]Thanks. [p]Sorry if I made a double post...

    Can't speak for what others do but I usually slice it all at once and freeze what i'm not going to use within a couple of days in foods saver bags.
