I know that flank steaks can be done this way.....diectly on the coals.....but, can 1.5" Rib Eyes be done this way???? Flank steak is thinner and I like my steaks rare to med rare. What would the times be and do I dwell? I don't think so, but just asking....
Thanks, Paul

Midnight Smoker,
I did this with strip steaks once. I think I seared 2 min's per side and then dwelled just like normal.

The Naked Whiz,
Would the sear directly on the coals avoid the burn since they are only asorbing radiant heat below most of the fuel air mixture. I think the flames cause a burnt flavor.
Ideas?
