Apple-stuffed pork loin

Anybody here ever try Mr. Toad's recipe from the video that came with their BGE? I've misplaced the video, and the recipe in the Cookbook section of the website is too vague.

How do I roll up the apples in the meat? It seems like it would be tough to keep it from falling apart.

Any help is much appreciated!
