AL pastor. Stack and slow or grill individually?

Have a pan full of marinating pork. Sliced 3/8 inch thick the short way across the loin. Should I stack them in a couple of piles or grill individually? Going on a LBGE later this afternoon after a 5 hour soak.

Stack would be more traditional, tho' a lot slower. And also traditional, after cutting away the outside, the rest goes back into the Egg to brown the trimmed edges.
Myself, I'd go non-traditional with slices that thin. Cook them flat, and slice into ribbons. Might have to do several batches.
