Smoked and Braised Short Ribs

Smoked with JD whiskey barrel oak chips and braised with Carnivor Cabernet, beef broth, and butter. About 2.5 hours smoked at 225, then about 2 more hours in the braise, tossing them around occasionally, until they’re 200 IT. Turned out pretty tasty! Served on some rustic garlic mashed potatoes Mrs. Dyal cooked up.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Great cook as always. Nailed those ribs. Most eggcellent.
Last time I smoked a four bone chuck short rib rack I got to the finish-line before all the fat rendered. The beef was great but too much fat, even for me. I will shift back to the beef back ribs for a while before I go again.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -
