Turkey Leftover Night

No pictures but it did happen. I needed to make use of previously Egged turkey before it went bad. Here is a recipe that I've used several times.

Turkey Chile Verde

one pint of leftover previously cooked turkey, diced
one onion diced
2 tablespoons olive oil
1 pint of turkey or chicken broth
1 can navy beans drained
1 can chickpeas(garbanzo beans) drained
1 jar of a quality salsa verde, 16 ounce side
salt and pepper to taste.

saute the onions in a heavy walled soup pot. Add the test of the items and cook until the flavors are well melded, say an hour or so. In this case I added some kosher salt and a half dozen dried Thai peppers from this years garden.

    This sounds good.  I may be trying it tomorrow unless some other contenders show up.  Anyone else have favorites?

    I did my turkey in the fryer with a spicier variety of Essence injected and rubbed.
