Wet aged brisket nihari and naan.

Wet aged a prime packer for 4 weeks or so. Smoked it this past weekend. Turned out well, but it wasn't spectacular. Probably pulled it a little earlier than I should have,  but it was getting late.

Ate a few brisket breakfast tacos and brisket breakfast-for-dinner tacos. Still had a lot of brisket left. So settled on chopping up most of the flat for making brisket nihari (Pakistani beef curry).

The nihari was made indoors. Basically made the sauce base with fried onions, garlic,  tomatoes. Added spices (mace, nutmeg, cardamom, etc) and yogurt. Banged out some homemade naans brushed with garlic butter. I definitely need more garlic butter in my life.

 
Not the best pic, but this turned out! This recipe for nihari was better than the one I cooked at  Salado in March, so its a keeper.

    If it's better than the brisket nihari you served in Salado (and that I brought home as "leftovers") then I'm going to have to request that 2 deli tubs make it to Chez Jonz and that one of them get frozen.

    Of course, after Salado, I'm surprised you're not working on your wing game...

    That's a great idea.  I am an excellent custodian of "leftover" Indian food.

    That's a great idea.  I am an excellent custodian of "leftover" Indian food.
    Akin to the fox guarding the henhouse. @Foghorn I'll make some for the next time I see you. If you liked the brisket nihari from Salado, you'll probably dig this more. I was too agressive about scaling the spices up for the recipe I used earlier, and ended up overdoing it in IMO.

    That looks a little too ethnic to me. I would probably eat some of that just so you didn't get your feelings hurt.

    That all looks wonderful!  I really like naan, need to try to make it, sometime.  I don't make Indian dishes often, but I really like the few I make.  I have a red lentil dal recipe that is simple, but that stuff on basmati rice, man, don't need anything else (though I usually do).  SO good.

    Love it, nice blisters on the naan. Miss the army canteen tray though! btw, sold my tandoor this summer, for $10 (I think) more than what I paid few years ago, it was too small to be practical.  Thinking of trying naan in the kitchen gas box between the broiler and steel on stone, have that set up dialed in for pizza lately.

    @theophan and @Stormbringer - my naan recipe and method is consistently reproducible. It will likely be different than the naans you are used to eating, but give it a whirl sometime :) . The dough has sourdough starter in it, but I'll try it with yeast sometime since most folks don't sourdough starter at hand.

    I forgot about using a section thali! would have been perfect. My sister gave me those small karhai's a while ago and I never got around to using them. Thought they would look "restauranty" :)

    I tried naan in the oven (under broiler, top rack, stone) but my results were middling. Would love to hear about it if you iron out the kinks. Advantage would be that you can make a few to several naans at once.

    And I hear you about the tandoor. It really needs some height to work well. But you had a cool toy to play with for some time, and even turned a small profit!

    We do non-traditional Thanksgivings here and in 2013 we did a main course of Nihari (BGE), Chana Masala (stove), Basmati (stove), and Naan (BGE).



    My goofball son had to photo bomb the pic and our old lab (RIP Abby) was doing her part being mellow next to the table.
