Looks like your ready to roll. When are you putting it on?

Guru is being a bit finicky, probably 15 min or so. Gonna wrap the flat in foil as Lou suggested, for a few hours anyway.

Probe the thickest part of the flat to see if it "feels like buttah" as @lousubcap suggests. 266 IT seems high, are you sure about the guru temps?Ubi panis, ibi patria.

@kweitz - many variables drive the answer to your question; type of cooler, amount of prep work before the FTC etc. I have gone 6+ hours in an el cheapo Igloo cooler. Pre-heated the cooler with hot water, double wrapped the brisket in HDAF (after the cooling rack rest), filled the void with dryer warmed garage quality towels and set in the sun. Brisket was at around 145*F. Others have gone longer.
How long are you trying to FTC?Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -
@lousubcap I really don't know yet. Brisket is just now coming out of the stall with an IT of 181, pit temp is 266, supper is at 1800 tonight. My first, so I don't know when she'll finish??

You should easily get into the FTC window. That's about all I am for with brisket cooks.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Keep running where it's at. You'll have plenty of time to hit your target temp then FTC. Good luck!

Looks absolutely delicious, but what does FTC mean?

Foil wrap, Towels around that, Cooler - allows the meat to be kept for long period of time while waiting to slice and serve.Ubi panis, ibi patria.
