Those look great! But 400° for two hours?

I hate it when I go to the kitchen for food and all I find are ingredients!

I like doing batches of boneless thighs. They keep well for later use in various dishes, sandwiches, salads, etc.. Nothing like a smoked thigh on an English Muffin for breakfast.

Yes I go direct for these. I cook to an internal temp of 175-190. I feel the thighs can handle that temp

Just did a breast for lunch. Didn't know your proportions so I used...
    1 tsp brown sugar
    1/4 tsp oregano
    1/8 tsp salt
    1/4 tsp chipotle chili powder

It was good, but needed something. Probably more salt, but no can do. Might add more chipotle next time. Maybe less sugar.

Sorry I forgot one important thing you need to make white barbecue sauce the ingredients are
    one cup of light mayonnaise
a splash of apple  cider vinegar
    a splash of Worcestershire sauce
    1/2 teaspoon garlic powder,
     1/2 teaspoon onion powder
1/2 teaspoon freshly ground black pepper

    makes a good dipping sauce

I will just agree with you and take your word for it.  There must be nothing like a smoked thigh on an English muffin for breakfast.
