As many of you are aware Sunday is National Brisket Day. Several here are eagerly participating for a great cause.
Please use this thread to post any level of detail you wish regarding your brisket journey. Last year this event was a catalyst for many to first run with a brisket cook. Time to go again. Above all, have fun. (The cow drives the cook.)

I'll kick it off, as I've got nothing better to do than wait until it's time to start the fire.
Cooker of choice for the weekend:
Protein #1 - 14.9# SRF Black brisket:

Yes, I see there is a spot there light on rub, I'll fix that when I put it on.
Cooker prepped and ready to light:
Fueled with 90# of Kingsford Professional briquettes and oak chunks.
Plan is to light around midnight and start the briskie around 1:00AM. Other proteins to join the party in the morning sometime.They/Them

@thetrim - I find that calculation to come up short-even when going straight from the SRF shipping box (2 day standard rate) to the fridge. With beef it can sit thawed in a fridge for weeks as long as the cryovac is not compromised.
I started the thaw for the brisket going on tonight on May 14th. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -

Overnight went well, only lost 10 degrees on my dome thermometer. However brisket is going on 20 hours. It was a big 18 pounder pre-trim, so not getting impatient yet. Wife and I are patiently waiting on the patio, coronas in hand...

Went to publix. Walmart was out. (I know lack of planning on my part yada yada yada.) I asked the lady butcher if she had any briskets. She smiled took me to the cooler. A 3 lb and a 4 lb. I asked if she had any packers. She asked what that was. So I asked if she had anything bigger than a 4 lb. she said no, but she went and looked any ways. Came out with a 13lb still in the cryovac. Still puzzled, asked if this is what I had in mind. I smiled. Yes ma'am.Slumming it in Aiken, SC.
