I'm a center cut man and always, always, always bone in! But, and here is where I will lose you ... I actually prefer my pork chops cut very thin.

I love the center cut

In my area they call it an Iowa Porkchop. It's a pork T-Bone. Even at the same temp I like the different textures between the loin and tenderloin sides.
