Cooked it up last night instead of on Easter Sunday. On Sunday, my beagle decided to sniff out a small Copperhead snake and take a bite to the snout. It was a $1,500 vet ER visit, but it looks like she's gonna be fine. The antivenin treatment seemed to work well. Gonna hafta keep an eye on her for the next coupla days.
Anywho, here are the food pix. Originally wanted to place the roast over the potatoes, but it didn't fit on the top of the AR (and I didn't feel like swapping out the grate). 250 deg f indirect for a coupla hours until it hit an IT of 125.
