Why 2 Eggs makes sense...

Morning All:
got to be able to do the protein on one & the side on another...tonight was pork tenderloin & corn soufflé...started the soufflé on one of the large Eggs, here it is after about 20 minutes...
Put the tenderloins on the small Egg...one with DP Shaking the Tree (in the back) & the other with DP Mole...
Another 20 to 25 minutes later both tenderloins are between 143 & 150 internal & resting while the soufflé finishes...
And the finished soufflé (already falling )...
Also had some tator tots (but didn't feel like lighting the other large Egg so did those in the big box in the kitchen)...another delicious & quick dinner!

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
