Chicken Wings and Flash Frying?

Anyone got any good ideas or good recipe for grilling wings on BGE and Flash Frying them after? A local restaurant we have does this and their wings are great? Any rubs or ideas that could make them great? I know a lot will say just grill on the BGE but I was looking for something a touch different by adding the Flash Frying. Any help would be appreciated. Thanks

if you want to maintain some smoked flavor you need to go heavy with the smoke as the oil will wash some off in the fryer

I can say this about how I do it. I cook mine direct or indirect does not matter. I do put them in the frig uncovered over night naked no rub or anything. I pull out of frig put baking powder and my rub. The baking powder makes them nice and crisp. I sometimes even put baking powder on them before I overnight in the frig. They will look and taste fried. @BGE1983
