Going Turbo on Some Baby Backs

Picked up some baby backs from RD and decided to try turbo on them. Coated with mustard and Meat Church Holy Cow. A couple of chunks of oak and some cherry chips for the smoke. Couldn't seem to get 3 racks to fit properly so I cut them in half and put them in the rib rack. Plan is to go 2 hours at 350 then check them and decide what to do from there. Probably just baste with sauce and let go another 30 minutes to an our.
My last few rib attempts have been a little dry. Hoping the combination of turbo and less time on the egg will be the magic formula for me.

Turbo at 350 is my preferred way to cook ribs. At 2 hours, they're usually done and ready to pull. Be careful if you go past 2 hours.

I basted them at the 2 hour mark and they probed like butter. Internal temp was at 207 but as you know it is hard to get an accurate reading on ribs.
I let them go another 10 minutes on the egg to set the sauce and then I pulled them, added more sauce and wrapped them in an aluminum pan to sit until supper.

Ever since I read @Mickey's recipe for turbo and tried it, it's the only way I cook ribs now - even on my smoker.

Nice. I like mine at 100 mins.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

They turned out great and everyone was happy with them except my wife. She thought they were a little too spicy but she really isn't into spicy.
