As usual the good smoke was slow playing me! Let it cruise at temp for about 40 minutes and decided to take the plunge! 250 grid temp and butts are on.......to be continued

Just a follow up since meat has been on egg for roughly an hour. Smoke is picture perfect with clear/light blue with that delicious smell you all know! Egg crept up to 280 grid temp so bumped her down just a rid bit to try to drop the temp a notch. IT of back butt 75. Try to do one more post before I cozy up in bed tonight. Keep your egg hot and your beer cold tonight folks!

Well 2 hrs in. Got the temp dropped a little and seems settled at 266. This is first low and slow with smokeware chimney and high que so a second round of learning temp control tonight. Going
