Costco Pork Belly

I was in my local Costco the other day and notice that they had pre-sliced pork belly. Has anyone tried to cure and make bacon out of this?
A few thoughts:

- Would you want to build it back as a slab?
- Would you use less cure or less time as it is likely to get in between and cure more than usual?
- When you spoke it should you tie the pieces together as a slab?
- Other issues/concerns?

If you want bacon, why not buy a whole belly and cure/smoke? It will be far easier to slice.

My costco carries both sliced and whole.Northern Virginia

My Costco started carrying belly sometime back. at first, they only put it out sliced, but now they sell it sliced and whole.
if you ask, I bet they'd give you an uncut one

They have both, but don't have a slicer and the hand cutting has not done so well.

I've used the sliced variety twice now. My Costco had them cut about 1/2" thick. This last time I cut the slices in half and did an overnight "cure" in a Ziploc with brown sugar and kosher salt (about 5:1 Sugar to salt). After rinsing well the next day, I tossed it in a bowl with the same ratio to coat the exterior. Then it hit the egg for about 4 hours at 250. Meat candy! It was great on Pork Belly Tacos with tangy slaw. Next time I'll do the uncut belly slab and see how that works out.

I suppose you could cure those strips and cut them into big bacony chunks, like lardon on steroids...
I've done a sort of hot brine in a crockpot, then smoked them, then sautéed, to make a crispy pork belly bite.
