Been wanting to try these for awhile now. I used the "Serious Eats" recipe for the marinade and let them go for 48 hours.  Smoked them indirect at at around 290 deg f with apple wood for about 1 hour and 45 minutes. They appear burnt at first glance, but they were actually just caramelized and dark from the marinade (think biting into a teriyaki chicken skewer, but better.  :) )










Drizzled on a little unadulterated marinade before serving.
